Grilled Barramundi with Green Gazpacho Sauce

1 1/2 cups coarsely chopped cucumber
3/4 cup coarsely chopped green onions
1/2 cup lemon zest
2 tablespoons olive oil, divided
4 x 200g mahi-mahi Fish fillets
200g small red and yellow cherry, grape tomatoes, halved


  1. Combine cucumber, onions, lemon zest, 2 tablespoons oil, and optional chilies in processor. Pulse mixture until finely chopped. Transfer to bowl.
  2. Heat 1/2 tbs oil in large non-stick skillet over medium-high heat.
  3. Add fish and cook 5 minutes. Turnover, cover, and cook until fish is just opaque in centre, 4 to 5 minutes.
  4. Divide sauce among 4 plates. Top each with 1 fish fillet. Scatter tomatoes to serve.
