Blueberry Protein Pancakes

  • 3/4-1 scoop Maxine's BURN Protein powder (flavour of your choice)

  • 4 egg whites

  • 1/3 cup rolled oats (raw)

  • 1 Tbsp almond or low fat milk

  • 1/4-1/2 cup blueberries


  1. Place all ingredients in a bowl until combined. If you prefer a smoother batter, mix the ingredients except blueberries in a blender slightly to break down the oats, then add the blueberries and mix by hand.

  2. Pour onto a non-stick fry pan, lighly oiled with coconut oil or extra virgin olive oil. Cook 1 at a time or multiples if pan is large enough.

  3. Cook as per a normal pancake, until bubbling then flip and cook on the other side until cooked through.

Serve with additional blueberries and a drizzle of sugar-free maple syrup.
