Turkey "muffins"

Serves: 5 (based on 200g portion lean meat)

  • 1kg lean Turkey mince (or mince your own turkey breast fillets in a food processor)
  • 2 tbs chia seeds
  • 4 cups of spinach
  • 100 grams of quinoa flakes
  • 2 garlic cloves
  • 2 tsp dried basil
  • 2 tsp oregano
  • 1-2 tsp of chilli flakes
  • Salt and pepper


  1. Preheat a fan forced oven to 180°C. Lightly spray a muffin tray with olive oil or coconut oil.
  2. In a large bowl, use a wooden spoon to mix turkey mince, chia seeds, spinach, quinoa, herbs, garlic and chilli until well combined.
  3. Roughly measure out 10 handfuls of the mixture and roll into balls. Add and remove from each as needed until each muffin is the same size.
  4. Place each ball into the greased muffin tray and lightly press down. Bake for 20-25 minutes, until golden brown. Allow to cool slightly before removing from tray.
  5. Serve with a side of veggies to make a meal, or have on their own as a high protein snack.
